Guild Members “Celebrate the Pig”

Industry studs and BG Members Duskie Estes and John Stewart of Zazu and Bovolo restaurants, located in Santa Rosa and Healdsburg team up with BG Charter Member Dave the Butcher on October 20th for a one-of-a-kind fundraiser not to be missed!

The event takes place at Fresh Starts Cooking School in Novato from 6:30pm – 9pm and features a deliciously meaty four-course menu including:

  • Pork Cheek Sliders with Salsa Verde
  • “BLT Salad” with Pork Belly Croutons
  • Black Pig Fennel Sausage with Peppers and Polenta
  • Quince Tarte Tatin with Bellwether Farms Fromage Blanc Gelato

Recent and proud additions to the Butcher’s Guild: Black Pig Meat Co. team up with fellow BG Member: Dave the Butcher of Avedano’s and Marina Meats to create a wonderfully fun evening in order to fill bellies and help demonstrate new techniques and ideas for your home kitchen.

Estes and Stewart have recently gained the prestigious Michelin Guide recommendation, appeared with Chef Emeril Lagasse on his “Emeril Green” show and received the Rising Star Chef Awards for Sustainability in 2009! This ambitious duo also operate Black Pig Meat Co. which raise and market sustainably farmed pork.
