This autumn, Butcher’s Guild members were invited to learn from one of the great masters of butchery, Dario Cecchini. He traveled from Tuscany to San Francisco to share his passion, knowledge and techniques. We also offered courses in branding, mastering your profit margins, merchandising and the business of further processing. You know, heavy duty meat-nerd stuff.
