Watch this video featuring Butcher’s Guild members go knife to knife in the Eat Real Festival Flying Knives Butchery Competitions. Our members participated in two separate contests, butchery of: a hindquarter of beef and half a hog. The Guild was well represented with members in both categories. Each team was given a full 45 minutes to break down a whole pig into their featured high quality cuts, from primal to retail.
Anya Fernald emceed the competition while the judges inspected the work, looking for accuracy, quality of trimmings, technique and teamwork.
The teams featured Butcher’s Guild members: Adam Tiberio of Tiberio’s Custom Meats, Dave Budworth of Marina Meats and butcher at Avedano’s Holly Park Market, Brian Butler, master butcher and proprietor of Salt & Time and Benjamin Runkle, proprietor of Salt & Time . These two teams competed against one another as well as the butchers of Fatted Calf.
