Flying Knives Butchery Contest

Watch three competing teams of butchers break down a steer hindquarter right before your eyes at the Steer Butchery Contest and a pig in the Pig Butchery Contest. They’ll have 45 minutes to make their high quality cuts – from primal to retail. Judges will be looking for accuracy, quality of trimmings, technique, and teamwork.

Steer Butchery Contest will be held on the Main Stage @ 5:00pm Saturday, September 24th

Pig Butchery Contest will be held on the Main Stage @ 3:30pm Sunday, September 25th
