I am a management professor at Roger Williams University in Bristol, RI. As part of my research, I am exploring the craft meat industry. I am especially interested in how the craft side of the industry has grown in relation to the industrial side (e.g., whole animal butchers versus industrial butchers like Tyson and the other nasty industrial stuff out there). 

By any chance does the Butchers Guild have any figures that might capture the recent growth of craft butchery?
