Houston Country Club seeking a Lead Butcher

Houston Country Club seeking a Lead Butcher to join our team! You will thrive in a fast-paced environment and dedicate time for three dining rooms and substantial banquet business. The Lead Butcher reports to the Sous Chefs and is responsible for the fabrication of all meat and seafood as per SOP, all kitchen inventories of meats/seafood items.

Understands and uses standardized recipe cards and production sheets. Produces correct amount of mise en place for daily use by using recipe cards and production sheets, with as little waste of time or product as possible, ensuring that time and materials are not wasted.

Understands and follows sanitation practices. Properly cools and stores all foods.

Has all A la Carte production is to be ready by 10:00 am for lunch service and 4:00 pm for dinner service. Production is prepared according to daily requisitions from the various departments. All banquet production is to be ready a minimum of 24 hours in advance (if applicable) of the function. Banquet production is prepared according to daily production sheets reviewed with Banquet Chef.

Confers with the various department supervisors regarding weekly protein requirements.

Maintains an inventory list of Non- and Slow-Moving Items, which are updated on the Slow and Non-Moving Board.

Provides the Restaurant and Wayside Sous Chefs with a daily list of available seafood, including the Catch of the Day.

Educational/Work Experience Requirements

2 year culinary work experience

Must be able to pass the practical qualification test

Must have the knowledge of basic culinary fundamentals.
Must have a working knowledge of sauces, stocks, dressings and butchering skills.
Must be able to communicate in and have a basic comprehension of the English language, or be enrolled in classes to enhance the ability to communicate in and comprehend English.
Must be able to work a flexible schedule and/or over time as needed.
Must be available to work weekends and holidays.
Must work well with others as a team and help co-workers as needed
