Bryan Butler

Salt & Time co-owner and Master Butcher Bryan Butler has a lifetime of experience as a Butcher.  After graduating from Texas State Technical College’s Meat Fabrication and Market Management program he worked as a journeyman butcher in shops big and small. Eventually landing in Austin, he became well known to his neighborhood clientele at favorite quirky market Fresh Plus and the iconic Wheatsville Food Coop.  In 2010 he partnered with Ben Runkle to take Salt & Time from a small farmers market operation to Austin’s first whole carcass Butcher Shop, Salumeria and Restaurant. He has always embraced the idea of the old school butcher as opposed to that of the modern meat cutter.  With twenty plus years of experience he has worked in a wide variety of roles in the industry.  He places a strong emphasis on responsible sourcing, education and customer service.
