Brian Polcyn

Chef Polcyn has been butchering and cooking in kitchens for nearly 40 years. He is nationally recognized for his works on the craft of Charcuterie and his skills as a butcher, particularly European seam butchery. Twice nominated for a James Beard award, Chef Polcyn currently teaches Charcuterie and butchery at Schoolcraft College and travels the country with his son teaching whole-hog butchery and Charcuterie courses.
