My name is Vincent and I work/live at the Vermont Butcher Shop.

About 2 years ago, I walked in as a blank slate, and now I cannot imagine a life without my knives.

As far as the craft goes, I love the transformative aspects of everything butchery. You take an abstract, break it into the manageable, and then chop it into perfection.

There is an artistry that you never have to justify, as every day the case is a gallery showcasing our technical skills as well as our daily intuition. I have a special place in my heart for Briskets (Big Ol' Briskeys) and meat art in general. Butchery gave me a very real purpose and direction, and I look forward to when I can pay the community back for everything it has given me.
