I have been an executive chef for almost four decades. Currently lead chef instructor at the Auguste Escoffier School of Culinary Arts in Austin TX.
I teach Restaurant Operations and Entrepreneurship, and also something very close to my heart - Farm to Table class where I demonstrate to my students how to butcher hogs and teach them the importance of sustainable farming and the ethical treatment of animals.
I am a Blacksmith, Bladesmith and a former pastor with a masters degree in theology.
