I am the chef and owner of Cured in San Antonio. A three-time James Beard Award finalist for “Best Chef: Southwest” I began to make a name for myself in New Orleans, up until I started my battle with cancer.
I eventually moved to San Antonio, and opened Cured. Cured was named a top 50 nominee for Bon Appétit’s “America’s Best New Restaurants 2014”, a runner up for Esquire’s “Best New Restaurants in America 2014”, and to Eater’s list of “38 Essential Texas Restaurants” in 2018.
Grown with immense hard work, my restaurant stands as a testament of my journey and skill - my artisan meats are the cornerstone of my menu.
I owe my hands-on, unadulterated culinary approach to my deep-rooted Wisconsin-farm upbringing.
My approach to work is the same as my approach to life - appreciation, gratitude and celebration of life. By joining The Butchers’ Guild and donating $1 from every charcuterie board ordered to a different charity each quarter, I want to continue to give and pass on the good things in life!
